Chicken curry

A cheap midweek meal using storecupoard ingredients

 1 Pkt of Savoury rice
 ½ Pkt cooked chicken (65g)
 1 Onion chopped
 1 Garlic cloves chopped
 1 Handful of frozen peas
 1 Handful of spinach chopped
 2 tbsp Mayflower curry powder
 1 tsp heaped of Peanut butter(optional)
 1 tsp Oil
 2 dashes Soy sauce (optional)
 150 ml Water

Cover the rice in boiling water and cook as per instructions on pkt

Meanwhile heat the oil and fry an onion till soft, add the garlic and stir through

Drain the rice and add to the onions, sprinkle over the soy sauce and stir through

Add the peas, spinach and chicken and stir through

In a saucepan, mix a little water into the curry powder till you make a smooth paste then add in 3/4 of the remaining water,continue to stir,bring the sauce to a boil,stir in the peanut butter then simmer for 2-3mns till its blended and thickened. Add more water if you like a thinner sauce

Serve the chicken and rice, pour over the sauce and enjoy.

This can be bulked out with added veg such as peppers,sweetcorn etc
