Chicken Noodle Soup with dumplings

Yields1 Serving

 1 chicken carcass
 1 onion diced
 1 carrot ( no need to peel just cut into chunks
 3-4 garlic cloves peeled
 Enough cold water to cover the carcass
For the soup ;
 1 carrot diced
 1-2 beats of vermicelli per person
 Salt and pepper
 For the dumplings : follow Nigellaa recipe

Boil up the carcass with the diced onions,chopped carrot and garlic cloves . When it's come t the boil let it simmer for 4-5 hours or overnight in the slow cooker

Skim off any fatty boys as it cooks

Strain through a Muslin cloth or fine sieve and allow to cool. Pick any reman get chicken off of the bones and reserve

When cold you can remove any fatty deposits that may have settled on the top

Pour the liquid into a large pan add the diced carrots and heat until the carrots are cooked through

Season with salt and pepper and add the vermicelli for last 5 minutes of cooking . Add the chicken you've picked from the bones and let it heat through

Serve with the dumplings that you've poached in water
