Chicken Parmesan Pasta Bake

Yields4 Servings

 12oz penne pasta
 A couple of handfuls of roast chopped chicken
 1.5 tins chopped tomatoes or better still a pint of hidden veg tomato sauce
 8oz grated mozzarella
 4oz grated Parmesan cheese
 2 minced garlic cloves
 Salt and pepper
 0.5 bunch chopped basil

Heat oven to 190c

Cook the pasta in boiling salted water

Drain and reserve some of the pasta water

Put the pasta back in the pan , add the garlic tomatoes, salt , pepper and chicken . Stir well

Pour half this mix into a casserole dish . Top with half the mozzarella . Pour the remaking pasta mix on top add a little of the pasta water. Now top with the remaining mozzarella and all the Parmesan

Put in the oven and bake for 30 minutes

Scatter over remaining basil before serving with a salad and garlic bread
