Chicken souvlaki

 3TBSP lemon juice
 2tsp oregano
 2tsp oil
 1/2tsp salt
 4 minced garlic cloves
 500g diced chicken
 1 red, 1 yellow pepper (optional)

Combine the lemon juice, oregano, oil, salt and garlic in a ziplock bag and shake to combine

Add chicken to the bag, seal and marinate in the fridge for 30 minutes

Remove the chicken from the bag, discard the marinade. Thread the chicken and peppers if using onto the skewers

Either grill or use a griddle to cook for 10 minutes turning frequently and ensuring chicken is cooked evenly

Serve with pitta, salad, tzatiki and Greek rice
