Delicious filling soup

 1 chicken
 4 pt water
 2 small onions sliced
 2 tbsp chicken stock powder or chicken stock cubes
 200 g pearl barley
 4 leeks sliced
 4 sticks of celery sliced
 6 carrots sliced
 1 tsp thyme
 1 tsp parsley
 1 tsp salt
 1 tsp black pepper

Boil your chicken until cooked through (1 hour or so)

Remove chicken from the stock and set aside to cool

Add all the other ingredients to the pot and boil for 1 hour

Shred some of the chicken and add back into the soup and season to taste
