Courgette and Lemon Drizzle Cake

A tasty way to use that glut of courgettes

 200 g Grated courgette
 150 g Caster sugar
 1 Egg
 125 ml Vegetable oil
 200 g Plain flour
 0.50 tsp Salt
 0.50 tsp Bicarbonate of soda
 0.25 tsp Baking powder
 1 tsp Cinnamon
 2 tsp Lemon juice
FOR THE DRIZZLE
 75 g Icing sugar
 1 tbsp Lemon juice
 2 tsp Lemon zest

Heat oven to 160c

Grease a loaf tin

Beat together the courgette, sugar ,egg and oil

In a separate bowl sieve the flour , bicarb,baking powder , salt and cinnamon , stir through the lemon zest

Add the flour mixture to the courgette mix and stir until just blended

Pour into prepared tin .Bake for 45 minutes or until a skewer comes out clean

Mix the drizzle ingredients

Remove cake from the oven and let cool for about 10 minutes

Poke holes in the cake with a skewer . Pour over the drizzle mix

Remove from tin and allow to cool completely on a rack
