Creamy Cajun chicken pasta

A chicken pasta dish with a bit of a kick

 2 Chicken breasts
 300 g Pasta
 Knob of butter
 1 Red or orange pepper
 1 Yellow or green pepper
 4 Spring onions
 250 ml Chicken stock
 150 ml Double cream
 Salt
 Pepper
 2 Cloves garlic
 Parmesan shavings
 2 tsp Cajun seasoning or to taste

Cut the chicken breasts to a butterfly.
Slice into thin slices

Put into a bowl or back

Sprinkle over the seasoning and toss to coat the chicken

Put a large pan of salted water on to boil

Chop the vegetables and crush the garlic

Add the pasta to the boiling water and cook as per packet instructions

Melt the butter in a pan .
Add the chicken and cook on both sides

Remove from the pan

Add in the veg and cook until softening

Add the garlic and cook for a minute or 2

Remove the vegetables

Pour in the chicken stock , scraping the pan to remove all the flavours of the chicken and veg

Pour in most of the cream . Stir , stir , stir season with salt and pepper

Add the chicken and veg into the sauce . Stir to combine

Drain the pasta

Stir the pasta through the chicken and veg . Coating it in sauce

Serve topped with Parmesan shavings
