Farmhouse Fruit Cake

ALL recipes are based on a family of four.

 8oz Self Raising Flour
 8oz Granulated Sugar
 2oz Sultanas
 2oz Currants
 2tbsn mixed peel or do as I do and grate a carrot,
 4oz butter
 2 beaten eggs
 4 tbspns Milk
 A little Demerara Sugar

Heat oven to 180C

Grease and line a 7" round cake tin

Rub the butter into the flour

Add the sugar and fruit, stir to mix it through

Add the eggs , beating them in with a wooden spoon

Add enough milk to give a dropping consistantcy

Put into the cake tin

Sprinkle the top with Demerara sugar and pat it down

Bake for about an hour or until a skewer comes out clean

If the top is browning too much , cover it with baking paper.

Cool in the tin for 5 minutes and then put onto a wire rack to continue cooling
