Moroccan Fruity Couscous

Couscous – sometimes called kusksi or kseksu – is a traditional North African dish of small steamed granules of rolled semolina that is often served with a stew spooned on top.
It's naturally low in fat, can be a good source of fiber (the whole wheat version), and provides some protein, B vitamins, and minerals.
Used instead of rice or pasta it can be served plain or with a little spice mix, fruit, chopped nuts etc.
This makes it a tasty addition to salads.

 120 g Couscous
 180 ml Boiling water
 2 tbsp Moroccan Spice mix
 1 Yellow pepper
 50 g Sultanas
 25 g Cashews
 30 g Flaked Almonds,toasted
 ½ tbsp Red Onion diced
 40 g Dried Apricots( optional)
 1 Garlic clove
 1 tbsp Olive oil

Prep:-
Dice the onion.
Dice the pepper.
Chop the garlic.

Heat the oil in a pan. Add the onion,pepper and garic and fry till soft

Add the sultanas, apricots, almonds ,cashews and spice mix and stir through

Add the Couscous and stir till covered in spice mix

Add the boiling water, cover with a lid and leave for 10mns till all the liquid has been dissolved

Separate grains with a fork and leave to cool

Serve cold as part of a salad or a side dish for chicken, pork or any meat you fancy

Tip - add some lemon juice for added zing
Tip - swap the Apricots for Cranberries or Dates
