Garlic Mushroom Linguine with Prawns

This dish is perfect for lunch or dinner as its so quick and easy. The combination of garlic,mushrooms and pasta is a base for most of my quick and easy dinners I must admit. I've added prawns but you can easily use chicken or chorizo instead or just leave it out all together. The choice is yours.  300 g Linguine Pasta or Spaghetti
 250 g Chestnut Mushrooms
 200 g Cherry tomatoes
 300 g Cooked Prawns
 100 g Spinach
 2 tbsp Parmesan
 4 Garlic cloves
 1 tbsp Dried Chives
 ½ tsp Mixed herbs
 2 tbsp Butter
 1 tsp Oil
 2 pinches S&P

Prep:-
Put a pan of salted water on to boil
Slice the Mushrooms
Slice the tomatoes in half
Chop or grate the garlic.
Grate the Parmesan

Add the pasta into the boiling water and cook as per pkt instructions (8-10mns appr)

Meanwhile add the oil and butter to a pan on a low heat and add the mushrooms

Fry for 3-4 mns then add the garlic, chives and herbs. Stir through

Add the tomatoes and stir through.
At this stage you could add some white wine if you like or cream.

Add the Spinach and stir

Add the Prawns

Drain the pasta -keep 1/4cup of the water. (50ml appr)
Add the pasta to the mushrooms and prawns

Stir through, adding the pasta water till you get the desired consistency.-I prefer mine not to wet

Serve with a spoonful of grated Parmesan sprinkled over, some black pepper and a squeeze of lemon juice (optional) with crusty bread on the side.

Easy swaps:-
Linguine for Spaghetti.
Chestnut mushrooms for Button mushrooms.
Cherry tomatoes for any tomatoes
Prawns for chicken or chorizo.
Parmesan for Cheddar cheese
