Goats Cheese & Bacon Tartlets

When there's not much in the fridge for lunch I like to make these quick and easy tartlets. They are seriously delicious and so versatile, as you can add any toppings, but my favourite is Goats cheese. The combination of tangy saltiness lends itself so well to the sweetness of the caramelised onion and the smoky taste of the bacon. Think you don't like Goats cheese? This may change your mind. I used mainly leftovers lurking in the freezer.
Puff pastry- I used a shop bought block but the ready rolled works well too.
Goats cheese,
Bacon bits(leftovers) Tomatoes. I used cherry but any will do, and some mixed frozen peppers.
You can tailor this to suit you and your families tastes by swapping out the Goats cheese for any cheese, including Cheddar, add salsa instead of the onions or cooked ham instead of bacon etc. You can get 8/10 tarts, depending on the size of your squares/rectangles or you could make 1 whole tart and cut into slices once cooked.  340 g Pkt Puff Pastry
 100 g Goats Cheese
 1 Onion
 4 Rashers of Bacon
 50 g Cherry Tomatoes
 1 Pepper (optional)
 1 Egg
 2 tbsp Soy Sauce
 1 tsp Sugar
 1 tsp Oil

Prep :- Take the pastry out of the fridge 30mns beforehand to allow it to come to room temp.
Slice the Onion.
Slice the bacon into small chunks.
Slice the tomatoes in half.

Add the oil to a pan on a medium heat.
Add the onion and fry till soft (5mns) then add the Soy sauce and sugar. Fry for a further 4-5mns till the onion is sticky and caramelised. Set aside to cool.

Roll out your pastry, place on a baking sheet and mark out your squares.

layer your ingredients onto the pastry - pepper, tomatoes, crumbled goats cheese and top with bacon.

Brush pastry with egg or milk. Place in hot oven 200° for 10 mins or until the pastry is risen and golden brown. Once cooked,turn the oven off, add a tsp of the caramelised onion to each tart. Close the oven door and let the tarts continue to bake in the residual heat of the oven for a further 2-4mns.

Serve with a salad for midweek lunch or dinner or on its own as a snack.
