 CARAMEL
 100g white sugar
 25ml water
 SYRUP
 500g white sugar
 300ml boiling water
 2 tbsp lemon juice

In a pan over a medium heat swirl together the caramel ingredients.

Do NOT stir as this may cause it the crystallise

Let it darken and thicken

Dissolve the sugar in the water

Add the lemon juice

Mix well

Pour into the caramel mix - be careful it will spit

Allow the mix to simmer for about 45 minutes

At this point it will be a golden colour and a little runnier than honey

Pour into sterilised jars

The syrup will thicken on cooling
