Halogen baked Roast Vegetable medley

A lovely side dish full of flavour

 ¼ Red onion
 ¼ Yellow pepper
 ¼ Courgette
 50 g Cherry tomatoes
 ¼ Small White onion
 ½ tbsp Oil
 ½ tsp Lazy garlic or crushed fresh garlic
 ¼ tsp Mixed herbs
 ¼ pinch Chilli flakes
 ¼ pinch S&P

Chop all your veg to roughly the same size (leaving the tomatoes whole)

Cover a baking tray with tin foil or baking parchment

Add all the veg then drizzle over the oil,garlic,herbs,chilli flakes and seasoning

Gently Mix everything together making sure to coat it all then spread it out into an even layer

Place in the Halogen with the extender ring added and Bake at 175°for 15-20mns then give it another mix and continue cooking for a further 5-10 mns or untill its soft.

This is lovely as a side dish but can also be added to a chilli, a tomato sauce or a casserole to give a depth of flavour. I use different oils too to give a slightly different taste. Lemon is lovely as is chilli infused.
