Halogen baked Salt n Chilli Wedges

Quick,easy,full of flavour and a little spice makes these great as part of a meal or as a snack on their own.

 8 Potatoes (Medium sized)
 4 tbsp Oil
 1 Onion
 1 Handful of mixed peppers sliced
 1 Chilli-deseeded and sliced
 1 Garlic clove chopped
 1 tbsp Salt
 1 tsp Chilli flakes
 1 tsp Chinese 5 spice
 1 tsp Garlic powder
 1 tsp Pepper
 1 tsp Sugar
 1 tbsp Oil

Cut your potatoes into wedges - I cut in half then cut each half again until I get the thickness I want.

Add them to a bag or bowl along with 4tbsp of oil and shake them till they're coated in the oil then put on a tray in the Halogen oven. You will have to do this in batches

Bake for 20-25 mns at 175° turning over after 10-15 mns.

Meanwhile add your dry seasonings to a bowl- salt,5 spice,pepper,sugar.garlic,chilli flakes and mix together.

Heat the remaining tbsp of oil and add the onion and fry till soft

Add the pepper,chilli and garlic and fry till soft

Sprinkle half the dry seasoning over the pan and mix or toss it all together till coated

Remove the wedges from the Halogen and add to the onions and peppers. Mix everything together, sprinkle over the remaining seasoning and toss or stir again

Serve as part of a main meal with steak,chicken or fish, salad or veg and a garlic mayo dip.

Tip- keep an eye on the wedges as they cook faster when turned and can easily overcook.
You can use a cooking spray instead of oil.
You can make extra seasoning for later use and store in a tub or food bag.
To increase the spiciness add an extra tsp of chilli flakes to the dry mix.
You can use this on meat too such as chicken, pork and beef as well as fish.
