Ham & Cheese Fritters

A speedy lunch using up any leftovers in the fridge

 200 g Plain flour
 250 ml Water
 1 tsp each of Salt & Pepper
 100 g Cooked Ham chopped
 100 g Grated mature cheddar
 1 Handful of spinach
 2 Handfuls of peas
 2 sticks Spring onion chopped
 1 Handful of mixed peppers chopped
 1 pinch Chilli flakes or herbs
 ½ tsp Bicarbonate of Soda
 1 pinch S&P
 1 tsp Oil

Seive the flour into a bowl,add the bicarbonate of soda,tsp of salt, the pepper and mix

Add the water a little at a time,whisking till a smooth batter has formed

Add the ham,and vegetables and stir through

Add the chilli flakes and cheese and stir

Heat the oil in a pan then wipe off the excess with a piece of kitchen roll

Take s spoonful of batter and drop it into the pan. Leave a little space between each one if your doing a few

Cook for 3-4mns and once you see bubbles on the surface turn over using a dry spatula and cook for another 2-3 mns

Lift out of the pan and place on a little kitchen roll,cover and keep warm whilst you cook the rest.

Serve with salad and a sweet chilli dipping sauce for lunch or on their own for breakfast

This makes 20 small fritters
They freeze well-just wrap in greaseproof paper and pop into a re sealable bag.
You can use S.R flour too if you dont have plain
