Ham & Chorizo loaded omelette

A cheap filling dish that's perfect for using up bits of leftovers.

 6 Eggs
 1 Onion diced
 100 g Ham chopped
 50 g Chorizo chopped
 1 tsp Garlic crushed (optional)
 1 pinch Chilli flakes (optional)
 75 g Grated cheese
 6 - 8 cherry tomatoes halved
 1 pinch Mixed herbs
 2 pinches Parsley or coriander chopped to garnish
 1 tsp Oil
 40 g Butter

Heat the oil and butter on a low heat, add the onion -increasing the heat slightly and fry till it's soft and translucent then add the garlic and chilli flakes and stir

Break your eggs into a bowl and give them a mix with a fork then pour it over your onion and garlic

Tilt the pan to allow the egg mix to coat the whole pan -don't stir

Allow the eggs to set on the bottom - you'll see them going slightly paler round the edge of the pan-don't worry about the top being runny as it will continue to cook when your adding the rest of the ingredients

Add the ham,chorizo,herbs,tomatoes, S&P then cover with the cheese

Place under the grill till the cheese is melted and golden - this will also set the top if its still a bit runny.

Garnish with fresh chopped parsley or coriander and slice as you would a pizza- you may need to run a spatula or flat knife round the edge to loosen it off

Serve with salad and crusty bread or chips
Tip-add bacon,peppers,mushrooms or any meat,veg or herbs that you like to this to this. Mix it up and enjoy.
