Homemade chicken stock

 1 or more chicken carcasses
 2 sticks celery, roughly chopped
 2 carrots, roughly chopped
 1 onion, roughly chopped
 1 bunch fresh parsley ( optional )
 2 bay leaves
 6 peppercorns

Put everything in a large pan .

Top with water

Bring to the boil

Simmer for a 3-4 hours or cook overnight in a slow cooker

Strain

Cool in fridge

Remove fat from the top

Freeze in portions
