Lentil and spinach soup

Yields1 Serving

 1 onion chopped
 4-5 gloves garlic minced
 200g red lentils
 1 tin chopped tomatoes
 500ml veg stock
 400ml water
 4- 5 blocks of frozen spinach
 1 1/2 tsp cumin
 1 tsp smoked paprika (I just had normal)

sweat the onion and spices of for 3 mins then add garlic and cook for 2 more mins

add rest of ingredients and simmer for 30mins or until lentils become soft. Serve with warm crusty bread yummy

Note.... Lentils like to drink water so keep eye on it as you may need to add a bit more if you don't like a thick spoon.
