Mango Salsa

Yields1 Serving

 1 mango chopped
 1 red onion chopped
 1 pepper chopped ( any colour )
 A few coriander leaves and stalks ( chopped )
 A few sliced mint leaves
 Juice of 1 lime ( to get more juice from your lime microwave it for 10-15 seconds before juicing
 A good dash of olive oil
 A chopped red chilli ( use as much or as little as you like )

Put all chopped ingredients into a bowl

Squeeze over the lime juice

Add a dash of olive oil

Mix well and chill in fridge for at least an hour before serving
