Mediterranean Traybake

This recipe was cobbled together by what I found in the reduced section of the supermarket- a packet of sausages, and a mixed veg medley(pepper, onion, butternut squash, courgette) I added some spices, potatoes ( Farmfoods have a bag of frozen chopped potatoes that are perfect for this) some cooked bacon, and a bit more veg and had a tasty filling meal in no time. This can of course be adapted to suit what you have available and of course what your family likes.... Why not give this a try and let us know how you get on in the comments below. We love to hear your feedback x

 400 g Sausages (6-8)
 1 Pkt of Mediterranean Vegetables
 1 Pepper
 200 g Cherry tomatoes
 400 g Potatoes
 4 Rashers of cooked Bacon(optional)
 1 tbsp Paprika
 1 tsp Garlic powder
 1 tsp Onion powder
 1 tsp Italian herbs
 ½ tsp Sugar
 ¼ ml S&P
 200 ml Chicken stock
 1 tbsp Sweet Chilli sauce
 1 tbsp Red Pesto
 1 Oil
 Spring onion to garnish
1

Prep :-
Measure out and mix your dry spices.
Chop the pepper.
Slice the tomatoes (optional)
I've added a pic of the potatoes and veg mix for reference.

2

Add the oil to a pan, heat on med/high, and add the sausages

3

Fry for 3-4 mns...You want to colour them to add flavour but not cook them through. Set aside.

4

Add the potatoes into the same pan on a low heat. Sprinkle over the spice mix and stir through till
they are coated but not cooked.

5

Add the veg pack plus chopped pepper to an ovenproof dish

6

Add the sausages and bacon.

7

Top with the potatoes

8

Pour in the stock.

9

Add the tomatoes

10

Cover with foil and add to the Halogen oven.
Cook @175° for 45mns.
200° for conventional oven. Same timing.

11

Remove the foil and Cook for a further 15-20mns till the potatoes are charred.

12

Drizzle over the sweet Chilli sauce and Pesto. Stir through.Taste and adjust the seasoning if needed. You can thicken the sauce with a little cornflour if needed

13

Divide into bowls or plates.
Serve hot with a garnish of Spring onion and crusty bread or toasted pitta to dip in the sauce.

14

Easy swaps:-
Pack of mixed veg for any veg.
Frozen potatoes for fresh
Spice mix for your own or a packet.
Sweet chilli sauce for Tomato paste.

15

This can become a one pan dish by adding everything into a casserole dish, mixing the wet and dry ingredients together, pouring it over the sausage and veg and baking for 1- 2 hrs in the oven at 200°
