Tex Mex style Flatbread Pizza

A speedy lunch

 200 g Plain flour
 100 g Warm water
 ¼ tsp Salt
 2 tbsp Oil
 ½ tsp Mixed herbs
 ½ tsp Garlic granules
 4 tbsp Tomato based sauce
 6 Cherry tomatoes
 4 tbsp Grated cheese
 1 tbsp Salsa
 1 tbsp Guacamole
 1 tbsp Chilli cheese mayo
 1 tbsp Sour cream
 1 pinch Chilli flakes
 1 pinch Coriander
 1 Handful of crushed Tortilla chips

To make the Flatbreads- Put the flour, salt &herbs in a bowl and mix

Gradually mix in the water ,bring the mix together with your hand, add the oil & knead to a soft dough- leave to rest for 30 mns

Divide the dough into 2,roll out each until they are 1cm thick and fry in a hot pan for 2 mns each side

Transfer to an ovenproof tray. On each flatbread add 2 tbsp of tomato sauce.chilli flakes chopped tomatoes and grated cheese.

Bake for 15mns at 200°

Add the other toppings any way you want and serve with a salad

Tip- add cooked chicken or chilli to make it more substantial
Tip- use a tray of dip selection to keep cost down
Tip- add jalapenos for extra spice
Tip- make the flatbreads ahead of time and freeze so you can assemble this in a few minutes for an even speedier lunch
