Mixed pickles

Yields1 Serving

 1kg of mixed fresh veg ( cauliflower, corgettes, beans , baby onions carrot etc )
 60g table salt
 Sarsons white pickling vinegar
 Optional : a few slices of chilli , fresh dill

Prepare the veg and cut into small pieces

Put into a large bowl and sprinkle over the salt

Put aside for 24 hours

Rinse and drain the veg thoroughly

Pack into sterilised jars

Cover with the vinegar adding the chilli and dill now if using

Seal and leave for at least a month before using
