Moroccan Sweet Potato Salad

When we think of potato salad we generally think of white potatoes smothered in salad dressing. This recipe changes things up a bit by using Sweet potato, dried fruit and a tangy marinade. You can buy a jar of Moroccan Seasoning / Ras El Hanout but its expensive to buy those small jars....much better to make it from scratch and store it in an airtight container. This can then be used for lamb or pork dishes or even a coating on potato wedgesand tailored to suit your tastes. Why not give this a try and let us know how you got on in the comments below.  1 kg Sweet Potatoes
 1 Red/ Yellow Pepper
 50 g Dried Apricots
 50 g Sultanas
 4 tbsp Virgin Olive Oil
 1 tbsp White Wine Vinegar
 1 tbsp Lemon Juice
 1 tsp Paprika
 1 tsp Turmeric
 1 tsp Cinnamon
 1 tsp Mild Mustard
 1 tsp Garlic paste
 1 tsp Ginger paste
 1 tsp Sugar
 2 pinches Chilli flakes
 ½ tsp S&P
 1 Spring onion bulb to garnish

Prep:- peel, wash and cut the potatoes into small chunks.
Slice the peppers into small chunks-I used a mix of red & yellow.
Chop the apricots into small pieces.
Slice the Spring onion.
Measure the spices into a bowl.

Put the potatoes into a pot, cover with water and bring to a boil. Simmer for 15-20mns until cooked - soft but still a little firm so they don't turn to mush.

Drain

Add the Peppers and dried fruit to the sweet potatoes.

Mix the Oil, vinegar,lemon juice and all the spices including the S&P together

Sprinkle half the marinade onto the sweet potato mix and toss them gently making sure everything is coated. Use your hands so your not breaking them up too much.

Allow to cool. Taste and adjust the seasoning if needed. Add a little more marinade if needed.

Garnish with chopped Spring onions.
Chill in the fridge till needed.

Serve as a side with a green salad and cold meat. This also goes well with gammon or sausages.
Can be eaten hot or cold.

The remaining marinade can be store in an airtight container in the fridge for 1- 2 months

Easy swaps:-
Pot for oven- roast the potatoes by placing in the oven,drizzle with oil and bake for 20mns.
Apricots for peaches or dates.
Sultanas for raisins or mixed fruit.
Spring onion for coriander.
Turmeric,paprika,cinnamon for mixed spice or garam masala.
Sugar for honey.
