Poor mans Wellington

A tasty cheap alternative to a traditional beef Wellington

 1 onion finely diced or grated
 1 carrot finely diced or grated
 1 stick of finely diced celery
 2 diced or grated potatoes
 3 cloves of minced garlic
 olive oil
 4 sprigs of thyme
 Good handful of frozen peas (optional)
 1 egg,
 500g very lean minced beef
 2-3 very thin pancakes
 Puff pastry

Gently saute all the veggies, garlic, and the herbs, stirring occasionally, until your vegetables are tender

This will take about 6-8 minutes.

Put them into a large bowl and allow them to cool completely.

Once they’ve cool add in the beef and peas

Heat oven to 180c

Now get into the bowl with your hands and start kneading everything together,

Add salt and pepper and half of the beaten egg

Make sure everything is good and mixed up and evenly mixed

At this point you could cook the mince mix in foil or a loaf pan for 10 minutes

Flour a work surface and roll out the puff pastry to a 1/4 inch thickness.

Shape your beef mixture into a log

Lay the very thin pancakes onto the pastry

Put the mince on top finish shaping and brush the edges with the reserved egg.

Roll it up, tucking the ends brush the sealed pastry log with beaten egg

Place it on a baking sheet seam down, and lightly brush the top with the remainder of the beaten egg.

Bake the Beef Wellington for 45 min to an hour, depending on your oven, until golden and crispy on the outside.

Allow the Beef Wellington to cool for about 5 minutes.
