 4 pork loin chops - fat removed
 Salt and black pepper
 1 tspn salt mixed with some plain flour
 2 eggs
 Dry breadcrumbs

Put the chops on top of some cling film

Cover them with another piece of cling film

Using a meat mallet or rolling pin batter out the chops until they are about 1/4” thick

Season both sides with salt and pepper

Dip in the seasoned flour

Then the egg

Then the breadcrumbs

Shake off any excess crumbs

Fry in a little hot oil for about 2-3 mins each side

Serve straight away - Delicious served with a peppercorn sauce
