Potato Galette

 1lb of peeled small potatoes
 About 4 tspns olive oil
 Salt and pepper

Heat oven to 220C

Grease a baking tray with about 1 tspn of the oil

Very thinly slice your potatoes ( a mandolin is great for this but it can be done with a sharp knife

Run the slices under cold water

Drain and put them in a bowl

Add the remaining oil and seasoning and toss well to coat

Arrange the slices on the baking trays in overlapping circles. You can make 1 big one or 4 smaller ones

Bake in a hot oven until tender and golden ( about 25-30 minutes )

Serve
