Part of a traditional Scottish breakfast
Peel and chop your potatoes then boil them in a pot of water for 30mns appr then drain
Mash the potatoes adding 25g of butter and S&P if desired. Leave to cool
Add the cold potatoes to a bowl with 100g of flour and mix by hand,working the flour through the potatoes. The mix should be slightly dry and pliable and not too wet
Put the dough onto a floured surface and divide into 4
Flour your rolling pin and taking one part of the dough flatten then roll out till its 1/2" thick.(Try to keep it circular)then using a sharp knife divide into quarters.
Take s frying pan and add a little of the remaining butter and fry for 2-3mns either side, medium heat till golden brown
Serve with sausage and egg,or a full Scottish/English breakfast or eat on its own
