Rice Pudding

Yields1 Serving

You can add raisins or steed fruit to this or add a different spice . Add some cream or evaporated milk

 1.5oz pudding rice
 1oz sugar
 1pint of milk ( or half milk half cream or half milk half evaporated milk )
 A knob of butter
 Grated nutmeg or 1 tspn of cinnamon or mixed spice
 1-2oz dried fruit ( raisins , sultanas ) optional

Heat oven to 160C

Put the rice into a greased ovenproof dish

Add fruit ( if using)

Add the sugar

Pour in the milk

top with shavings of the butter

Sprinkle on the nutmeg or cinnamon or mixed spice

Bake towards the bottom of the oven for 2 hours

Stir after 30 minutes

This can also be made in the slow cooker. Cook on low for 6 hours

Can be served with a dollop of jam , some fruit puree or chocolate shavings
