Roasted red pepper , pesto and cheese tart

Yields1 Serving

 about 4 sheets of filo pastry halved
 Melted butter
 Pesto - homemade or jarred . A few spoonfuls
 2-3 roasted red peppers
 Finely grated cheddar- to taste
 Crumbled feta cheese
 1 egg per person
 Salt and pepper
 A couple of spring onions or salad me chopped chives

Make a foil ring or use the ring from a loose bottomed cake tin and sit on a lined baking sheet

Layer the filo butter between each slice . Crunch it up

Spoon over the pesto. Then the sliced peppers . Top with grated cheese and crumble over the feta . Sprinkle over some sliced spring onions or chives

Bake at 200c for 5 mins . Crack an egg on top and bake until just set

Season with salt and pepper and serve
