Roasted vegetables

Use your favourite veg

 Pepper
 Courgette
 Red onion
 Cherry tomatoes
 Garlic cloves
 Mushrooms
 Aubergines
 Asparagus
 Garlic Oil
 Salt and pepper
 Italian herbs

Heat oven to 200c

Prepare the vegetables so that they're all a similar size

Put into a bowl

Season with salt and pepper

Add the herbs

Add a good glut of garlic flavoured oil

Mix with your hands so that everything is well coated

Place on a baking sheet

Roast until the vegetables are softened and starting to colour

Serve
