This slow cooker Moroccan lamb shank is amazingly easy to cook and full of flavour. This makes this recipe a great alternative to a Sunday Roast. Make a paste using a tbsp of oil mixed into the paprika,turmeric,sugar,salt,pepper,cinnamin,garlic and ginger

Using a tbsp of the paste rub it over the lamb shanks before adding them to a hot dry pan to sear

Turn over after 2 mns, repeating till it's seared on all sides

Turn on the slow cooker and transfer the shanks to it.

Meanwhile add the remaining oil to a pan along with the onions and fry till soft (4-5mns)

Add the garlic and chilli and stir through

Add the flour and stir through

Fry for 2-3mns till everything is combined then add to the slow cooker

Add everything else to the slow cooker-the tomatoes plus a tin of water,the remaining paste,dried fruit,honey and oats

Cover and cook on low for 6-8 hrs or high for 4-5 hrs

Once cooked check the sauce is thick and full of flavour.You can add a little water to thin it down if needed.Taste it and add seasoning if required.

To serve-Garnish with the coriander and a drizzle of lemon juice along with boiled buttery New Potatoes and Peas or veg of your choice.

Adding the oats thickens the sauce further as the steam creates more liquid hence why some dishes tend to be watery.
Harissa paste would work well if you don't have all the individual spices
