Slow Cooker Choc Chip Cookie

Slow Cookers are not just for soups or stews! Everyone loves Choc Chip Cookies - they're my daughter's favourite and this super easy recipe will soon become your favourite too. Using store cupboard ingredients this recipe can be whipped up in no time,popped in the slow cooker and forgotten about till they're ready to serve. They can be customised for your own families likes and dislikes swapping the milk chocolate for plain or white or all 3 if that's what you like.. This is an easy recipe to do so is great for the kids to be involved in.  100 g Butter
 85 g Sugar
 80 g Brown sugar
 1 Egg
 1 tsp Vanilla extract
 200 g Plain flour
 1 tsp Baking soda
 2 pinches Salt
 200 g Milk Chocolate chunks
 4 squirts of Cooking Spray

Prep:-
Bring the butter out of the fridge to soften 30mns beforehand.
Spray the Slow cooker with the cooking spray.
Cut 2 x 4" strips of baking parchment and place in the slow cooker diagonally to make a X

Place the butter in a bowl along with the sugar and cream them together with a mixer (2-3mns) or wooden spoon (8-10mns)

Remeber to add the brown sugar (oops)and repeat the steps above. Lol

Beat till the mix should be light and fluffy.

Add the egg and vanilla extract.

Slowly combine till the mix is smooth.

Add the flour,baking soda and salt.

Beat or Stir everything together till fully combined.

Stir a tbsp of flour through the chocolate chunks then add to the mixing bowl.

Fold in the chocolate chunks till everything is combined.

Pour the mix into the Slow Cooker.

Cover with a tea towel. Place the lid on top and cook on high for 2hrs or low for 3-3.5hrs. Keep an eye on it as it may burn at the edges.

When the mix is almost cooked through but still slightly soft, remove ceramic insert from the S.cooker base and place it on a cooling rack to cool.

Once cooled, lift the cookie out using the b. paper inserts. Peel the paper off, slice and serve.

Enjoy on its own, warm with ice cream or pouring cream.

Adding some flour to the chunks stops stops them sinking to the bottom of the bowl.
