Put the oil in a saucepan on medium heat
Add in the garlic and tomato purée and cook over a medium heat for about 3 minutes. It should form a paste
Add in all the other ingredients and cook on a gentle simmer for about 30 minutes
Makes approx 1 pint of sauce
Take out the bayleaf before using to baste your meat
Will keep in a jar in the fridge for a couple of weeks
