Stuffed cabbage

A vegan dinner that can be transformed for any taste buds.

 8 Whole cabbage leaves.
 2 cups Dry rice
 2 Onions chopped
 1 Pepper chopped
 1 Courgette chopped
 6 Mushrooms chopped finely
 2 Gloves garlic minced
 ½ Of the Left over cabbage shredded

Bring a big pan of water to the boil and add the cabbage leaves. Boil till tender and you can fold them. Aboit 8mins.

In a pan cook the rice as packet says.

Drain the cabbage and carefully move to a save place to leave to cool.

Fry in a lightly oiled pan the veg till soft then add the garlic. Fry for a few mins. Turn heat if and wait till rice is cooked

Once rice is cooked add and mix in the veg.
Important... taste the filling add salt and pepper if needed now

Place all leaves on bench and spooned mixture in each on till i used it all. I then rolled up as best you can.

Place in a oven dish.
I fried if some fresh tomatoes and garlic but you can use any thing.

Cook for 20mins and serve with a salad.
