Stuffed Mushrooms

A lovely starter for lunch or dinner

 4 Large mushrooms
 150 g Cream cheese(garlic&herb)
 2 Thick rashers of smoked bacon chopped
 2 Cloves of garlic chopped
 100 g Extra mature cheddar grated
 50 g Baby spinach shredded
 2 sticks Spring onions chopped
 50 g Breadcrumbs
 1 tbsp Butter
 1 pinch S&P

Clean your mushrooms,remove and chop the stalks roughly

Melt the butter in a pan and add the bacon, mushrooms stalks and garlic and cook for 5 mins

In a bowl mix the cream cheese,breadcrumbs,spinach and half the cheese and the same of spring onion and mix

Add the bacon,mushrooms and garlic and mix well.
Season with S&P

Turn the whole mushrooms up so the dark side is facing up and Spoon 1/4 of the mix onto the bed of each upturned mushroom

Top with the rest of the grated cheese and spring onion

Bake in the Halogen oven at 175°for 15-20 mns or main oven at 200°for 20mns

Serve with a side salad and crusty bread for lunch or as a starter. Its lovely with pork chops as part of a main dish
