Thick and chunky vegetable soup

Yields1 Serving

 1 large peeled potato, cut into chunks
 2 carrots chopped into large chunks
 1 large onion cut into wedges
 1 green pepper cut into thick chunks
 1-2 red peppers cut into large chunks
 1 tin of tomatoes
 2 garlic cloves , finely sliced or grated
 Salt and pepper
 1 pint of vegetable stock

Put all of the ingredients into a large pan , pressure cooker or slow cooker .

For a pressure cooker , cook for 12 minutes

In a pan on the hob cook for about 25-30 minutes

In a slow cooker cook for about 2 - 4 hours on high

When cooked remove most of the veg with a slotted spoon

Whizz up all the potatoes and remaining vegetables to thicken the soup

Add back the rest of the vegetables

Check seasoning and serve
