Tzatziki

A lovely refreshing dip to add to any salad or picnic

 1 ½ Cucumber
 750 ml Greek yogurt
 6 Garlic cloves crushed
 12 sticks Fresh mint chopped
 6 tbsp Lemon juice
 1 ½ tsp Dried mint or dill

Halve the cucumber lenghtways and scoop out the seed(discard them as they just water down the dip)

Grate 1/2 the cucumber and squeeze out any remaining water

Chop the remaining cucumber into small chunks

Empty yoghurt into a bowl and add the cucumber, garlic, mint including dried,and the juice of the lemon

Stir,season with S&P if needed

Serve with crusty bread or cruditiés
