Winter Vegetable Soup

An anything goes soup that works well in the slow cooker.

 1 Leek
 1 Onion
 2 Carrots
 8 Brussel Sprouts
 2 or 3 Handfuls of frozen mixed veg
 1 Handful of peppers.
 4 Potatoes (skin on if liked)
 2 handfuls of porridge oats
 1 tsp Garlic granules
 1 tsp Mixed herbs
 2 pts of Chicken or veg stock
 2 pinches each of S&P
 2 Handfuls of Spinach salad leaves

Wash and Chop all your veg-(grate 1 carrot)
and shred the spinach

Add everything apart from the spinach to the Slow cooker

Cook on high for 4-5 hrs or low for 6-8hrs
I mashed it down slightly but it can be liquidised if preferred

Just before serving add the shredded spinach, stir and serve with crusty bread

Tip- add a swirl of cream before serving or some milk if your watching the calories
Tip- swap the porridge oats for barley( I didn't have any but the oats add creamyness and thickens the soup)
Tip-add any veg you have- I added stir fry veg as I had some left in the bottom of the fridge. Swede is also great to add as is parsnips etc
