Chicken souvlaki

3TBSP lemon juice

2tsp oregano

2tsp oil

1/2tsp salt

4 minced garlic cloves

500g diced chicken

1 red, 1 yellow pepper (optional)


1Combine the lemon juice, oregano, oil, salt and garlic in a ziplock bag and shake to combine

2Add chicken to the bag, seal and marinate in the fridge for 30 minutes

3Remove the chicken from the bag, discard the marinade. Thread the chicken and peppers if using onto the skewers

4Either grill or use a griddle to cook for 10 minutes turning frequently and ensuring chicken is cooked evenly

5Serve with pitta, salad, tzatiki and Greek rice
