00Slow Cooked Smoked Haddock KedgereeKedgeree is a favourite in my house and I try to have it once a week, as it's packed with yummy curry flavors. Sometimes I swap the fish about, depending on what's available or on offer on any given week. For this recipe I'm using smoked Haddock...the proper white smoked fish (the yellow stuff is only coloured to make it look more appealing)..... naturally smoked is fine too. 00Thai Red Chicken & Mango CurrySometimes there's nothing nicer than a bowl of creamy curry on a cold wet day. I've always liked fruity curries and as I had been given a Mango in my Pantry bag, I thought about using it in my favourite Thai curry. I found a recipe that I adapted to suit what I had available and it worked really well. It's creamy but not too sweet, with just enough heat to satisfy the taste buds without blowing your head off. I used a medium curry paste but obviously you can adapt this to suit you and your families tastes by using a milder or hotter one. You can use tinned or frozen Mango- just defrost beforehand, or If you don't have a mango just leave it out altogether, it will still taste great. The choice is yours. I used the Ninja Foodi to air fry the chicken first, as I prefer the crispy coating this gives, and then sautéed the curry itself, but you could PC instead, or just sauté if you prefer to skip that step. This could also be made on the stove or the Slow Cooker by just adjusting the method slightly-instructions are at the bottom of the page. 00Tandoori ChickenTandoori chicken is a chicken dish prepared by roasting chicken marinated in yogurt and spices in a tandoor, a cylindrical clay oven. The dish originated from the Indian subcontinent and is popular in many other parts of the world.  Not many of us have a clay oven but we can replicate slightly by using our own ovens. You may never order this from a Takeaway again as its so easy to do. You can adapt it to suit your families tastes by making it as mild or as spicy as you like. The yoghurt cuts down on the heat of the spices and tenderises the meat at the same time. You can use thighs,drumsticks or chunks to make kebabs too instead of using a whole chicken. 00Chicken Chasni -ishA Fakeaway Friday Treat. Glasgow is renowned for it's love of curry and it's sweet tooth which is why we love this dish. It combines both and is so moreish. Sweet and tangy with a hint of spice... Just as a good curry should be. Normally I'd use cream but as I didn't have any I tried it with yoghurt and it worked really well.. Its speedy and versatile too as you can easily make it veggie by using Sweet Potato or Cauliflower or swap the chicken for fish or beef. The step by step picture guide let's you follow the recipe easily and allows you to tailor it suit you and your families tastes. 00Beef CurryFragrant,spicy and tangy this is a warming midweek dinner. A curry is a great way of using up cheaper cuts of meat and bits of vegetables that you find at the bottom of the fridge. You can add almost anything to it and it works well. It's easy to adapt to your families tastes as you just omit what you don't like or add what they do. You can speed up the cooking by using frying steak etc or let it simmer for 2-3hrs for a fuller flavour. The choice is yours. It's also a very forgiving dish as I forgot to toast my spices till after I had fried my meat lol but it still turned out great.This step by step picture guide allows you to follow each step closely but don't be afraid to adapt it if need be. 00Brazilian Coconut Chicken CurryThis curry is packed full of flavours. Its zesty,fragrant,spicy with a creamy richness that is exactly how a good curry should be. I normally mix the dry spices together and coat the chicken as I've done with previous dishes but I forgot till half way through and so worried that I'd messed up but nope, it was fine. Which is what I love about curries. They are very forgiving and trust me, with my memory that is a bonus. The step by step guide is easy to follow but it is just a guide. 00Cod Tikka Masala CurryFish isn't the natural choice when you think of a curry but as I love a curry and sometimes I dont want any meat then fish is a good alternative. This is packed full of goodness from the fish to the veg,has a little spice and some zesty lemon flavours so it's a great treat for the tastebuds. Its a family friendly recipe that you can tailor for your children's likes as well as the adults. Its also quick to cook which is always a bonus. Dont be put off by the spices- I've added my favourite blend but you can just use a tikka paste and skip step 1.Why not give this a try and let us know how you find it.
