00Meatball PastiesLeftovers.If like me, you always have a portion of dinner left thats not enough for a meal but you dont want it going to waste then pasties are the answer. I had meatballs leftover from last night's dinner (complete with homemade pasta sauce....passata,garlic,mixed herbs,chilli flakes )- recipe on the website. I added a few other ingredients. . ...mozzarella, bbq sauce and some pastry and made another dinner. These are also great to have as a snack for the kids coming in from school or for watching the footy. They can be frozen and reheated in minutes. 00Spinach and Feta Filo pieDinner this evening, is a recipe from a friend that is one of my favourites so I make it at least once a month. My kids call it Mum's yummy cheese pie but its actually a Greek dish- Spanakopita. If you haven't tried it before, you're in for a treat! Spanakopita is a delicious savory Greek pie made of perfectly crispy layers of filo dough and a comforting filling of spinach and feta cheese. Mines is by no means authentic but is just as delicious, as the principal is the same. I use what I have available at the time - cream cheese instead of eggs, red onion or white, fresh or frozen spinach, etc. I sometimes add the little tubs of olive,sundried tomatoes and feta found in the chilled cabinet.
