00Slow Cooked Wholemeal loafI usually use a packet mix when bakng wholemeal bread but thought I'd give it a try using some of the tips I've learned from our lovely fb followers. A Slow Cooker is not the first thing that springs to mind when you are going to bake bread, but I seem to have more success when using my SC as opposed to the oven, and find it's a softer bake too. 00Slow Cooked Smoked Haddock KedgereeKedgeree is a favourite in my house and I try to have it once a week, as it's packed with yummy curry flavors. Sometimes I swap the fish about, depending on what's available or on offer on any given week. For this recipe I'm using smoked Haddock...the proper white smoked fish (the yellow stuff is only coloured to make it look more appealing)..... naturally smoked is fine too. 00Sticky Glazed Ham Hock (slow cooked)Ham hock or lower leg of pork is a very versatile and economical cut of meat. It makes a nice change from a joint or chops. It's best cooked in the Slow cooker to make the meat really tender, but it can also be done on the hob or in the oven. I've used apple juice to glaze the hocks but you could use ginger beer, orange juice, cider or beer. I finished off in the oven to allow them to become sticky and charred but this can be done in the Airfryer too. I've used unsmoked hocks, but smoked is fine too. The choice is yours. Tip- my hocks were trimmed to remove the fat by my butcher but you can leave it on and just score the skin beforehand. Once cooked this can then be removed to crisp up in the oven if preferred. 00Slow Cooked Beef Stifado Greek beef Stifado, (Greek beef stew)!! It's a juicy and tender, melt-in-the-mouth stew full of Mediterranean flavours with a delicious, slightly sweet, intense tomato-based sauce which is perfect for colder nights. This can be cooked on the stove as a one pot meal but I decided to do it in the SC to allow the flavours to develop in their own time. This is easy to adapt to suit you and your families tastes and adding more vegetables etc. I've made it child friendly by swapping out the red wine for a stock pot but you can reverse that if you prefer. 00Dump Bag / Slow Cooker Beef RaguThis is the best way I have found to make beef ragu in the slow cooker. I don't like to use mince in the slow cooker if I can't brown it first which kinda defeats the purpose of using the slow cooker in my eyes! So by using a chunk of beef and then shredding it once cooked we eliminate that issue
00Slow Cooker French Onion SoupThere are few things more comforting than a real French onion soup - slowly cooked, caramelised onions that turn mellow and sweet in a broth laced with white wine and Cognac. The whole thing is finished off with crunchy baked croutons of crusty bread topped with melted, toasted cheese.....but this is FYF French Onion Soup so no brandy and no wine. Instead, we have beefy bovril cubes and a combination of Worcestershire and Soy sauce to make it as rich in flavour as any that you will get in a restaurant but at a fraction of the cost. I used a mixture of onions-some common or garden ones plus some shallots that I had left from another dish. I also used garlic butter on the bread before toasting the mixture of white and red mature cheddar cheese, adding another depth of flavour to this yummy soup. This is a great recipe that uses minimum ingredients but packs lots of taste and is very filling. 00Slow Cooked Cashew ChickenAnother Fakeaway meal thats delicious and I'm sure your family will ask for it time and again. Cashew chicken is a Chinese-American dish that combines chicken, with cashews and either a light brown garlic sauce or a thick sauce made from chicken stock, soy sauce and oyster sauce. As this is FYF I have adapted it slightly to our ethos of using what we have available in the cupboards.There's very little prep and the bonus is, by throwing it in the slow cooker, it leaves you to get on with your day. I used White wine vinegar instead of Rice wine vinegar and chicken breasts instead of thighs. You can adapt it to suit you and your families tastes and budget also by adding peppers or other vegetables that you prefer. The choice is yours.
