00Beetroot and Tomato SoupThis is a very forgiving recipe. The principle ingredients are Beetroot and Tomatoes, but then I added a red pepper, some wonky carrots and brussel sprouts that needed using up (No, you don't see or taste them once they are blended), along with Spinach and Chives, and it made 4 bowls plus 8 for the freezer! It's speedy, fresh, and full of nutrients. I'm sure you and your family will enjoy this recipe as much as mine did. Whilst I've done this in the Ninja Foodi, it's just as easy to do on the stove or in the Slow cooker. I used fresh beetroot that I had previously pressure cooked - you can find the instructions for this on the website. It's easy to adapt this recipe to suit your own tastes. 00Pressure cooked BeetrootThis is more of a "how to" than an actual recipe but it's worth knowing nonetheless. Prep work is important, as it saves time in the long run, saves waste and helps you plan meals more efficiently. Especially when you buy a load of reduced veggies or have a glut of some things that, on their own don't make a meal, but if prepped and stored correctly can be as important as the main ingredients of a meal. Vegetables are the backbone of our meals and are easy to prep and store, or freeze for another day. Beetroot is one of those that I love to prep in advance. I can then add it to soup, salad or various other dishes. I pressure cooked mine in the Ninja Foodi, but you could cook it in the Slow cooker or on the hob instead. 00Cheesy Leek and Broccoli BakeThis can be a stand alone dish served as a main meal or a side dish to a roast or steak dinner. Its creamy, cheesy comfort food that can be adapted to suit you and your families tastes by using different cheeses. a mild cheddar for a mellow taste or a strong punchy one for a more robust flavour. You can add a little cream for a richer taste or a few chilli flakes for a little heat. You can use fresh or frozen broccoli. The choice is yours. 00Caramelised Red Onion and Feta Tart.Dinner this evening is a speedy, full of flavour tart with a little taste of the Mediterranean. I tend to find pastry is always in the reduced section of the supermarket, so it can be made into a very cheap dinner in no time, by adding just a few ingredients- some we always have in, plus a wee bit of cheese- in this case Feta- from a salad dish we had the day before. Why not add some chopped olives for that true Mediterranean taste? As with lots of our recipes, this one is easy to adapt to you and your families tastes by swapping out the Feta for cheddar or the red onions for white etc. I'm having with couscous and a spinach salad so didn't add to the tart itself, but feel free to add in some spinach or parsley if you prefer. 00Onion Bahji’s Onion bahjis are an Indian fritter that's a standard side dish for a family curry night. Add a mint dip and you have the perfect pairing. They can be eaten hot or cold, so are a great TV snack when watching the footy, can be added to a picnic or a lunchbox. They can be as spicy or as savoury as you prefer, so play around with the spice blend till you get the taste you like. This goes for the onions too, as I used 1 red (for sweetness) and 1 brown. 00Honey & Ginger glazed Chantenay CarrotsChantenay carrots are extremely versatile and while they're delicious lightly boiled and served with butter and seasoning, there's no need to stop there! They can be eaten just as they are and are particularly popular with children because of their sweet crunchiness and small size. They can be served halved or whole as crudités with other vegetables and a dip. They can also be boiled,steamed,roasted,grilled,stir fried,microwaved etc. I've chosen to roast them in the Halogen oven but this can be done in a conventional oven too. Whichever way you choose to cook them they are a great addition to a Sunday Roast, a picnic or even to replace potatoes in your usual dinner. I served mine on a bed of Spinach and topped with maple glazed Spare Ribs which was delicious and just shows how versatile the little gems are. 00Loaded Hassleback potatoesThe Hassleback Potatoes were invented by a Swedish Chef at Restaurant Hasselbacken in Stockholm, and we have been enjoying them ever since. This particular style of potato is so versatile and easy to do- sliced into thin wedges but left joined at the bottom like a concertina, baked until the layers fan out into rounds of crispiness and served as is, or embellished with toppings of your choice. I had a pack of continental meat and some cheese and voila my humble potato was transformed into a feast of mediterranean flavours. This dish started out as a side but quickly became the main meal as I didnt want to spoil it by adding unnecessary extras and I found it so filling too. Its so easy to adapt this recipe to you and your families tastes by substituting the Salami or Chorizo for cooked ham and bacon or the Goats cheese for Cheddar. 00Three Cheese Vegetable BakeServed on its own or as a side dish accompaniment to Steak, Sausages or Fish this dish does not disappoint. Its cheesy, delicious and very more-ish. A great way of using up all the different bits of vegetables that are laying in the bottom of the fridge or are easily picked up from the reduced counter of the supermarket. I used a bag of casserole veg as my starting point then added some sweet potato,shallots,peppers and peas to it but it's really upto you what you use. I also used a dry soup mix as my base for the sauce as I had no flour. It really is that easy to adapt this and many other recipes. The step by step picture guide allows you to follow the recipe easily and adjust it to you and your families tastes.
