Pressure cooked Cauliflower Cheese

Cauliflower cheese is a classic dish that can be served as an accompaniment to a gammon steak, a roast dinner or as a main course if desired.
I've used the Ninja Foodi to Pressure cook the whole Cauliflower before covering with a creamy cheese sauce and finishing off in the Airfryer, but this can be done on the hob too.

 1 Head of Cauliflower
 300 ml Stock
 200 g Mature Cheddar
 1 tsp Mustard
 2 pinches S&P
 2 pinches Chilli flakes
 2 Garlic cloves

Prep:-
Cut the leaves off from the cauliflower bulb..
Grate the garlic.

Keeping the cauliflower whole rinse it well with cold water.

Put the rack in the low position inside the Foodi.
Place the cauliflower on the rack.
Add the vegetable stock or water.

Place the lid on.
Place the toggle in the SEAL position, push the slider to the left side.. Switch the foodi on Select Pressure-High. Select 10mns on the timer.
Press START.

The PRE sign will show as pressure builds. This can take 6-8mns. It will beep when it reaches pressure and begins to count down from 10 to 0 as it cooks. It will beep once more, when it reaches 0.

Let it release naturally - this can take a further 10mns. Turn the toggle to VENT to release any additional steam. Push the slider to the right then carefully open the lid.

Whilst your waiting on the cauliflower cooking, make the cheese sauce -
Add the flour and milk to a pot and whisk till smooth.
Add 3/4 of the cheese, mustard, chilli flakes, garlic and s&p. Stir until you have a smooth, thick consistency.
Set aside.

Carefully remove the Cauliflower from the pot, empty out any liquid remaining and dry with a piece of kitchen roll.

Cut the cauliflower into florets and place back into the pot.
Pour over the cheese sauce.
Sprinkle over the remaining cheese .

Close the lid.
Choose Airfryer mode.
Airfry at 180° for 15-20mns, or until cheese has melted and develops a golden crust.

Once cooked, divide into bowls and serve as a side or s main course if preferred.
