00Linguine with Turkey MeatballsA speedy dinner that's warming and full of flavour. Its a 2 step cooking process-airfryer then pressure cook for quickness but still only takes less than 20 minutes. I've used the Ninja Foodi to cook this but it can also be cooked on the hob. I've used Turkey Meatballs as they can frequently be found in the reduced section of the supermarket. They take less time to cook too and makes this for a very economical meal. I used Boursin garlic & herb cream cheese but you can use a supermarket own brand (plain or flavoured if you prefer. I added a grated yellow courgette as you don't taste it, but it helps thicken the sauce and get more nutrients into us too, so win win, but you could use green or leave it out altogether if you prefer. 00Chicken & Mushroom Cacio e PepeThis is a creamy one pot dish thats bursting with flavours. Cacio e pepe sounds posh but it just means "cheese and pepper" Traditionally served mixed through pasta but, as I had none, and in keeping with the ethos of FYF, I substituted it with chicken & mushrooms with a side of New Potatoes. 00Hamburger PastaLove your Leftovers. 2 hamburgers, 2 portions of pasta, some peppers and half a jar of pesto. Doesn't seem like much but with a little bit of ingenuity this can be a speedy meal for 4. I used Farfalle pasta as that's what I had but you could use any pasta you have in your cupboards .You can also bulk it out with any extra vegetables you and your family likes, add some garlic bread and you have a filling meal in no time. 00HOME MADE PASTAFresh pasta can be stored uncooked and covered in the fridge for up to 3 days. If it’s already cooked, drizzle some oil over it to stop it from sticking together. Also, you can freeze the fresh pasta in an airtight container for up to 8 weeks.
