Linguine with Turkey Meatballs

A speedy dinner that's warming and full of flavour. Its a 2 step cooking process-airfryer then pressure cook for quickness but still only takes less than 20 minutes. I've used the Ninja Foodi to cook this but it can also be cooked on the hob.
I've used Turkey Meatballs as they can frequently be found in the reduced section of the supermarket. They take less time to cook too and makes this for a very economical meal. I used Boursin garlic & herb cream cheese but you can use a supermarket own brand (plain or flavoured if you prefer. I added a grated yellow courgette as you don't taste it, but it helps thicken the sauce and get more nutrients into us too, so win win, but you could use green or leave it out altogether if you prefer. The choice is yours.

 280 g Linguine Pasta
 400 g Turkey Meatballs
 1 Onion
 1 Yellow Courgette
 1 Pepper
 2 Garlic cloves
 1 tsp Ginger paste
 2 tsp Paprika
 1 tsp Italian herbs
 400 g Passata
 500 ml Chicken stock (hot)
 75 g Boursin cheese
 100 g Spinach
 1 tbsp Butter
 2 pinches Black pepper

Prep:-
Dice the onion.
Grate the Courgette.
Slice the Pepper-I used a mix of red,yellow and green.

Add the Meatballs to the Air fryer basket.
Cook at 200° for 10mns with a shake after 5.
If using beef or pork you may want to give them another 2-3minutes.

Once cooked, turn off, remove the basket, cover the meatballs for now and set aside. Give the inner pot a wipe with a damp paper towel to get rid of the residue.

Switch on to Sear/Sauté 3-(medium), add the butter and the onion to the inner pot and begin to fry gently until it softens.
Add the courgette and pepper(s).
Add the garlic,ginger,paprika and herbs.
Stir through.

Add the passata.
Add the hot stock.
Add the Meatballs.
Stir through.
Add the Linguine.
Don't stir.

Place the lid on,move the slider over to the left,move the toggle to SEAL position (in the little valley)
Switch on to High Pressure for 0 minutes.
The machine will light up the PRE sign as the dashes flash and the count will begin.
This is the machine coming up to Pressure and can take 6-8 minutes. It will heat up the contents and cook as its doing this.
Hence the reason you only need O pressure time.
As it reaches pressure some steam will escape (this is normal) and you will hear the contents simmering away inside the pot.
Once it reaches pressure it will beep and the 0 will flash.

Leave to sit for one minute to allow a NR- Natural release (this prevents a spurt of tomato sauce all over your kitchen)
Move the toggle to Vent- up on the hill- to release the pressure.(use gloves as the steam will be extremely hot))
Once the steam has released the machine will beep and flash OPEN.
Move the slider to the right, you will hear a click and can now open the lid.

Open the lid, stir through- add a little more hot stock if needed.
Add the Boursin
Add the Spinach

Stir through for 2-3 mns until the Spinach has wilted.
Taste and adjust the seasoning if needed.

Serve hot with a pinch of cracked black pepper and some crusty bread on the side.

Linguine for spaghetti or any pasta.
Turkey for beef or pork.
Yellow courgette for green
Passata for tinned tomatoes.
Boursin for any cream cheese or Feta.
Italian herbs for mixed.
Ninja foodi for hob- cook the pasta as directed on the packet.
