Garlic Butter Spaghetti

Normally, we focus on meals for families, but occasionally, we get asked for meals to suit 1 person.
This is my favourite 1 portion meal that is ready in under 15 minutes, and can be as simple or as complex as you want. It can be adjusted to feed as many as you wish and adapted to use whatever you have in the fridge at the time. My favourite optional extra is King Prawns if I get them reduced. Eve x

 75 g Spaghetti
 1 tbsp Butter
 2 Garlic cloves crushed
 1 tbsp Dried Chives
 1 Handful of chopped Parsley
 10 Cherry tomatoes halved
 2 Sweet chilli sauce
 My optional extras....
 2 Slices of Prosciutto, cut into strips
 1 tbsp Parmesan

Boil a pan of water, add a pinch of salt.
Add the spaghetti and cook for 10-12 minutes

Meanwhile, add the butter to a pan.
Add the garlic,chives, and tomatoes and fry till softened.

Add the parsley and sliced prosciutto.
Stir through.

Once cooked, drain the spaghetti.
Add to the pan of tomatoes,

Add the sauce
Stir through

Sprinkle over the Parmesan.
Stir through.

Serve on its own or with a side of garlic bread.

Easy Swaps:-
Swap the Prosciutto for ham or bacon.
Swap the tomatoes for mushrooms.
Swap the Parmesan for cheddar.
Swap the parsley for spinach or coriander.
Swap the butter for olive oil.
