00Tomato Gnocchi with AsparagusThe full title of this is Rich Tomato Gnocchi with Parma Ham, Peperami, and Asparagus, but I thought that was a bit of a mouthful, so I shortened it 😀 This is one of those dishes that sounds posh but really isn't. It's really just mashed potato, dressed up to look fancy then I've added some Asparagus, a bit of Parma Ham and some Peperami.....yes you read that right....Peperami sticks that I found in the fridge that no one wanted any more, and I wasn't going to just throw out. They added a bit of protein and a smoky flavour to the sauce, which was lovely, and no one was any the wiser....bonus! This is an easy recipe to adapt to you and your families tastes, and I'll add some suggestions at the bottom of the page. This amount serves 2 but the ingredients can be doubled and stretched to feed 4....or for a lower cost option, you can add some stock, and it can be turned into a lovely soup. I've cooked this in the Ninja Foodi using the Sear/Saute setting, but this can also be cooked on the hob or in the oven. Why not give this a try and let us know how you get on in the comments below. 00Paprika Hassleback New PotatoesNew Potatoes are amazing for their fresh buttery flavours, but sometimes you just crave them with a little bit of spice and that's were this Paprika spice blend delivers. It's a little touch of sweet with just the right amount of spice to pep up your taste buds. Of course you can tailor it to suit your tastes by using less paprika, or a smoked paprika, which will add an extra depth of flavour, for a bit more spice try adding some chilli to the mix, or leave those flavours out altogether, and just dress them with a little salt n pepper. This is a lovely side dish that adds extra dimensions to your humble potato. I've used the Airfryer for this recipe but these can also be done in a conventional oven too. Slicing them into hasslebacks means they cook quickly, the spice blend gets into all the little nooks n crannies, and makes them look good too, but you can leave them whole if you prefer. The choice is yours, but why not give these a try and let us know how you get on in the comments below. We love to hear your feedback. E x
00Loaded Hassleback potatoesThe Hassleback Potatoes were invented by a Swedish Chef at Restaurant Hasselbacken in Stockholm, and we have been enjoying them ever since. This particular style of potato is so versatile and easy to do- sliced into thin wedges but left joined at the bottom like a concertina, baked until the layers fan out into rounds of crispiness and served as is, or embellished with toppings of your choice. I had a pack of continental meat and some cheese and voila my humble potato was transformed into a feast of mediterranean flavours. This dish started out as a side but quickly became the main meal as I didnt want to spoil it by adding unnecessary extras and I found it so filling too. Its so easy to adapt this recipe to you and your families tastes by substituting the Salami or Chorizo for cooked ham and bacon or the Goats cheese for Cheddar. You could even let the kids add their own toppings before baking. Why not give this a try and let us know how you get on in the comments below. We love to hear your feedback x
00Halogen Baked Roasted New PotatoesA Halogen Oven is as an energy efficient and healthy alternative to conventional ovens. It doesnt need pre heating so is quicker to cook with too. It can produce the best crispy bacon I've ever tasted as well as yummy Roast and Baked Potatoes as well as anything else you would cook in a conventional oven. These Roast Potatoes are crispy, garlicky and buttery. They are a great addition to a Roast dinner or a salad. They are small and sweet and don't need par boiling before cooking. If you have just purchased a new HO and aren't sure what to use it for then why not try these and let us know how you got on in the comments below. We love to hear your thoughts x
00Slow Cooked New PotatoesNew Potatoes are quintessentially the flavour of spring and summer. Whether your favourite is a Jersey Royal or an Ayrshire tattie their earthy nutty flavoured is fantastic in salads or as a side dish to your roast dinner. This gentle cooking method also allows the full flavour of the potatoes to come through. Yes, you could boil them for 20mns on the hob or in the microwave (but I don't have one) but on hot summer days that's not ideal -who wants a hot, steamy kitchen.? so this was the better option imo. This means I can do lots at the one time and use some for dinner and some for potato salad during the week. It also means it can free up space on the hob if your cooking other dishes. Try out this method for yourself and let us know what you think
