Spicy Spinach and Potato Pie

Spicy spinach and potato pie is something a little bit different! Filo pastry can often be found reduced in the supermarkets.

 1 tbsp oil
 1 onion, diced
 1 tin of potatoes, drained and sliced
 1 tbsp cumin seeds
 100 g peas
 2 tomatoes, chopped
 2 tbsp curry powder
 100 g spinach
 200 g filo pastry
 2 tbsp milk

Fry the onion and tinned spuds with the cumin seeds for 5 minutes.
Add the peas, chopped toms, and mild curry powder and cook for 10 mins.
Wilt the spinach with boiling water, squeeze the water out, chop it and add that.
The mix needs to be dry.
In a loose bottom dish layer the filo leaving it over lapping and brushing each layer with oil, then fold all the over lapping bits in and brush the top with milk.
Cook in the oven gas mark 4 or 160c for 30 mins or until golden brown.
