Creamy Parmesan and dijon spaghetti

This creamy parmesan ad dijon spaghetti dish is quick and very easy to make in just 20 minutes. Perfect for midweek meals.

 2 tbsp oil
 3 chicken breasts, diced
 2 garlic cloves, minced
 100 ml boiling water
 150 ml double cream
 1 chicken stock cube
 1 tsp dijon mustard
 1 orange pepper, sliced
 1 red pepper, sliced
 250 g cherry tomatoes
 100 g frozen spinach
 50 g parmesan, grated
 300 g dried spaghetti

Put your spaghetti on to cook as per the pack instructions

Heat half the oil in a large frying pan

Fry off your chicken pieces until they are cooked through, about 8 minutes

Remove the chicken and set it aside

Add the rest of the oil to the pan and add your peppers, tomatoes, spinach and garlic and fry for 5 minutes
nb I use frozen spinach for convenience you can use fresh if you prefer

Add the cream, water, mustard and crumbled stock cube and heat through, stirring occasionally for 5 minutes

Add the chicken back into the pan

add the parmesan to the pan

Stir until all combined

When the spaghetti is ready add one ladle of the cooking water to the sauce mix and then drain the spaghetti

Stir the spaghetti through the sauce and serve!
